Could someone tell me a list of things I should/can get programmed by the dealer.. i.e mirrors.locks

That stinks! I never talked to the dealer here about it, but at the NE Audi bash, there was this really generous guy (I think his name is Matthew, but I am bad with names so I am probably wrong) that came around with a laptop and entered the codes for everyone who wanted it. Talk about being nice, he must have spent a few hours just doing this for people. I think he probably drives an A4 or S4 and is on one of the other Audi forums.

Amazing - the car is smarter than me!
My dealer did both changes no questions asked. He even made a copy of the faq off this website for future use! If you go to the VW web site where the Audi technical bulletins are, you'll find one of the mods listed - and it describes it as a warranty repair, so you may need to talk to your local Audi rep if you really want it done. I listed the link with my post.
Anyway, the autolock is truly amazing. It remembers how many doors were unlocked when you hit ten miles an hour and only unlocks those doors when you take the key out. If you only unlocked the drivers door to get in, it will only unlock that for you next time. Pretty slick. The remote window is very handy too.
