Regarding bending: any size wheel can theoretically bend if the impact is forceful enough. If you are trying to keep a consistent diameter, 18" wheel/tire combos will have a shorter sidewall thus less protection for the rim than 17s or 16s. The shorter sidewall provides less protection because the amount of air cushion between the rim and the ground is reduced.
Regarding tires: like wheels, they are pretty subjective. Lots of folks like Bridgestone S03s in various sizes. Other popular ones are Michelin Pilot Sports, Toyo T1S, Dunlop SP9000s, and a handful of others.
