Shop wants $300.00 for all around car polish? Any chance do it yourself?
There are some many topics and they all different about polishing the cars.
Anyone tried to DIY?

First and foremost read Troys detailing notes, avaible on the Auto detailing forum.
Also you can read numerous DIY posts available on the auto detailing forum, including one I wrote up.
Since you are new use a Porter cable Random Orbital polisher, or equivalent. Dont use some $10 Harbor freight polisher! Order the appropriate pads to go with the polisher.
As for detailing products. You will need a clay bar kit, Polish ( I reccomend Menzernas Intensive Polish) and Finishing touch. And yes I do like the Menzerna glaze as a final step) as we all know random orbital will not remove swirls like a circular polisher. Then once done polishing use some sealant, whether it be Menzernas FMJ or Blackfire, or Klasse, or a handfull of other products to seal your car and protect it.
You will need micro fiber towels, patience, and some cold drinks for your detail.

Good luck with your detailing, as you will soon find out you can save yourself some serious money by DIY. $300 for a full scale detail is reasonable. This would include, multiple polish steps, claybar, interior detail, engine bay, wheels,and getting down on hands in knees with a tooth brush cleaning everything. If it is $300 for a polish, that is a rip off. But if you'd rather do it yourself, its fun.

My advice is decide if you really want to start doing your own full details and if you do then read up to decide for yourself what products, processes and vendors you want to use.
$300 is not excessive for a full detail IMO.
If you do decide to invest in equipment and products just make sure you make well informed decisions. It doesn't hurt to browse YouTube for how to videos and product demos.
I own a PC (porter cable) polisher and personally I'd recommend that a first time buyer seriously consider a Flex 3401VR instead. It's got much more surface correction potential than a PC does.
