Want to cook for my date tmrw. She said she like steak or chicken.


Help a brother out....

By the time I got around to ordering it I was told they were out. Anybody have a spare one to sell?

Default well.....

a simple filet mignon is great topped with Stilton bleu cheese sauce (melt Stilton with a bit of milk and a smigden of Coleman's dry mustard)....

ummm serve with steamed broccoli and sauteed mushrooms. (mmmm mmmm good) A nice dry cabernet sauvignon goes well with this.

or.... how about cornish hens... split the hens in half, salt, pepper, garlic powder them, broil until starting to crisp, then brush with a mixture of melted butter, a bit of tarragon and dijon mustard (fairly thick mixture)... baste, turn, broil, baste, turn, broil, you get the idea. serve with roasted baby red potatoes and veggie of choice. Perhaps a semillon-chardonnay blend with this?

have a fun dinner.

Default At home, I have a recipe for just such an occasion...

Chicken tequila fettucinni. Tastes good and guaranteed to get your date drunk.

Default Grill either on BBQ, nice bottle of red wine, salad w/watercress, scallopped potatoes....

scallopped potatoes;
slice potatoes thin
same for an onion
olive oil in bottom of baking dish
layer of onion
layer of potatoe
salt and pepper
dusting of flour
repeat over and over finally adding some graeted cheese to the top and enough milk to just shy of covering the ingredients and bake 40 min to 1 hour or till potatoes are tender.

Default I have a good recipe for parmesan chicken, really easy to make (15 minutes)...

... email me so I look it up tonight at home.
Suggestion for dessert (really good, easy and fast):
Stack ladyfingers - I usually use 6 (2 parallel, then 2 across, then 2 on top). Top with a scoop of vanilla ic cream. Top with white and dark chocolate shavings. Pour miture of coffee and baileys over that. Add a leaf or two of mint for decoration.
Takes 2 minutes, looks really cool and tastes awesome.

Default Here's a simple Filet...

Rub a little roasted garlic olive oil into the filet w/ cracked fresh black peppercorns. When theey are almost done (60-90 seconds) put a handfull of fine breadcrumbs and green onions on each filet, then drizzle a little butter over top. Leave them under the broiler to toast the top layer layer of crumbs.

Some roasted new potatos and sauteed pepper medley go well w/ that.

Default Simple for a guy --- filet (beef tenderloin), baked potato w/ sourcream/chives/bacon (more)

OK - get a good piece of meat - a beef tenderloin ie filet is great. Simple prep and if you have a good cut -- you can keep it simple is to place a bit of sea salt and lots of freshly cracked pepper on both sides and rub it in -- should be lots of pepper on top. If sufficient width about 1.5 inches -- about 5 minutes each side should make it medium rare -- depends on your grill

Baked potato is easy -- just have the extras on the side

I would steam some snow peas, maybe have a salad with tomatoes and other items -- spend money on a good salad dressing -- not the Kraft stuff

and get a decent bottle of Cabernet Sauvignon or even a Red Zinfandel to be different.

Default Foolproof... I should know...

Marinate cubes of NY steak in olive oil, crushed coriander, a little cumin, salt & pepper. Skewer them with yellow squash, red and yellow pepper, broil or grill til done, serve over jasmine rice cooked with chicken stock and the usual salad. Nice thing about skewers.. you can always test the stuff for doneness and EZ cleanup. Mushrooms, onion and garlic optional for obvious reasons
