I had to make this choice and picked the Garmin-V.
I would have got the street pilot color, if money wasn't an option.
ppc - large color display+ , extra cables and having to mount an antenna -
price - about the same for a V, as add-ons for ppc.
separate GPS - goes from car-car-bike-handheld, where PPC is clumsy with all the extra cables.
iPAQ with backpack GPS is fine, but antenna still needs to be remote, as there's no decent way to mount it at dash level, that I found.
Garmin-V sits nicely on the dash to right of cluster with good reception, and doesn't block view.
In-dash units were reviewed in a couple of different mags fairly poorly against Garmin.
Couple points to ponder anyway.
1) The Magellan NAV750 was $2,500 and hard to install and harder to keep current since you have to mail the entire thing back.
2) Laptop with the DeLorme stuff. WAY too much trouble and laptop screens aren't bright enough in the sun. And who wants to TYPE while driving?
3) iPAQ was impossible to see and hear. Especially with the top down.
4) The SP III is perfect, goes from car to car easily. Easy to hear and see. And you can download updates online.
If you're going to replace your radio head unit, an in-dash DVD one would probably be superior, but I don't have the multi-thousands for it.

http://www.garmin.com/products/spIII/</a
