Weird temperature reading - dropping after it reaches running temp!

There have been a number of people who reported their temp to go up a bit when the car is parked and idles for a couple of minutes.

I have it going the other way. The temperature will slowly drop down to somewhere around 75-80 (90 is dead centre). What seems to cause this is the type of driving I do. It seems to happen when I am letting the car cruise down a hill with me off gas for about 30 sec. It'll return to normal after a bit of regular driving when I get back on the gas.

I had my coolant flushed, cluster replaced, coolant sensor replace to the green variety. None of these have fixed it.

I'm running a '00 quattro with REVO and Forge DV. No other mod under the hood.

Any ideas?

When my 2000 TTQC ran cool it was because the temperature sensor was haywire and the radiator fan motor ran constantly, causing a temperature drop. Replacing the stock sensor for the fan cured the problem.
