I also have a Wusthof hollow edge santoku. I use it every day and love it!
I lust over this one, too bad it retails for over $700.

Yeah. I've always wanted a Japanese blade and then I saw this ceramic one...
...and thought how much more could it be over a $150 high-quality Japanese sashimi blade? Wasn't I surprised! Guess I'll just have to get a cheap steel Japanese blade. LOL!
