Calling all block 032 gurus...
So if you're inclined, please take a look see and tell me what you think...

If you measure block 002 and check your g/sec (you will need to log it at speed....3rd gear pull is good) and see what it comes back as....Anything less than 160, and that could be your problem, a bad MAF....
Start from there and repost results....
Try this - disconnect the MAF and take it for a drive, if the car seems better, chances are it's bad. You will get a CEL but you can clear it with the VAG.
Another thing to try after reconnecting the MAF and clearing the CEL, is to log and record block 002 and do a WOT in 2nd or 3rd between 2000 RPMs and 6000. Look at hte g/sec reading and it should read around 150 or above at 5000 or higher. If it is around 120 or lower, it's toast.
If the car runs the same, you probably have a vacuum leak somewhere.
Just my $0.02
Likely culprit? MAF producing low g/s values (which is its failure mode). Causes the ECM to think less air is entering the system than actual. That causes the lean condition. The ECM can correct up to +/- 20%. As others have stated, +/- 10% is ideal. So you are just out of the ideal range.
Shudder in first? Could still be the clutch. at 89K, your clutch could be done. Sudden onset clue could simply be a bad tank of gas.
Run 1 (2nd gear)
. air mass readings start approx 22 g/sec at 2000 rpm
. @5000rpm, it's about 115 g/sec
. peaks at 132 g/sec @6000rpm
Run 2 (3rd gear)
. air mass again about 115 g/sec @5000rpm
. peaks at 124 g/sec @5360rpm when I lifted off because I was approaching an intersection...
Run 3 (2nd gear again)
. air mass again about 115 g/sec @5000rpm
. peaks at 131 @6000rpm
What do you think?
Relatively consistent, at least... I haven't disconnected the MAF for a test drive because it's a royal PITA to do on a stock Passat or A4. It's buried inside the air cleaner which is sealed tighter than Pharaoh's tomb. There is an inspection port and I will see if I can use that to disconnect it.
with the mileage you have on it, rubber hoses could be getting a bit dry......
