255-40-17 on S4 wheels, on A6 2.8Q narrow body. Works?

That tire is too wide for the wheel...
8.5-9.0" wheels are recommended for 255 series tires, iirc (Although wide body A6s came with 255/40/17 on 8" wide wheels). I think your 7.5" wheels will be too narrow. You're better off sticking with the OEM spec 235/45/17 size. It's plenty of tire for our cars, imo.

I plan to use D2 A8 wheels, 17" and ET48 on my 2004 A6 4.2. Anoyone done this before?

On the '02 A6 4.2, I'm currently running 255/40-18s on 18x18.5" ET30 RS6 wheels. Figure that higher offset wheels (ET42 and ET48) will push a wider wheel/tire combo inboard and it could end up contacting and rubbing on the steering knuckle.
That said, while V8 A6s have wider fender flares than V6 A6's they also have a wider track as well--like 2" wider--so the overall space to play with between the fender lip and the steering knuckle compared to a V6 A6 could be more or less the same AFAIK.
