2.8 Valve Cover Gaskets
Do the Valves need to be adjusted or at least checked when the gaskets are replaced?
How much time should I allow? THinking about replacing spark plugs & plug boots too.

Depending on your skill level, about 30-90 minutes should do it
I agree with Kris on the wires, I wouldn't replace them unless there's a known issue (check the resistance from coil to plug, should be 6-8k ohms). Best deal I've seen is $100 for the set of 6 (PureMS.com)
Do take photos of the cams while everything is apart, lobe wear is a good indicator of how the engine is aging.
Also, be sure to use a small amount of sealant at the corners of the gasket per the factory manual.
