205/50HR17s should fit stock S4 17" Avus rims, right?

The problem will be that the rims will stick out further than the tire itself.
If you look at the recommendations on the wheel width for that tire I bet you will find they suggest 7".

P.S. It sounds like you are putting snows on your Arvus rims. You should really go with 225/45/17s. If you have lots of snow - then chose a tire with good snow traction and not one that compromises for performance driving.

Depends on the tire brand...
I have 205/55/16 SP8000s on 16x7.5 and there's plenty of rim protection. Some brands run wider than others in the same size. Bridgestone seems to run a little narrower and Dunlop & Yokos run a bit wider.
