would 215/55/16s fit on an A4 without any rubbing issues?

depends on how much lowered you are and wheel offset...
if you have stock susp, you should be fine. Even if you have stock sport susp, you should be fine if the rims have the proper offset (around ET35 I think).
But why would you want to put on the wrong size and throw off your speedo and odo readings? To me, it's not worth doing if it's just for price reasons.
