Let's use the Bridgestone Turanza LS-H, LS-V and LS-Z for the same tire size.
Are the sidewalls a stiffer design?
Is the tire made with a different compounds?
Any other differences?

Stiffer sidewalls yes, and likely difference compounds, but Bridgestone doesn't let us in on the details of their tread compounds unfortunately.
What you would actually feel real world is a bit sharper steering response as you go higher in speed rating, and slightly better dry grip. Expect to pay for the increased grip with a bit less wear of course.
