8.5 inch wide wheels
I would not personally suggest 8.5" wide wheels on the B5 unless you're open to the idea of possible modification being needed.

wheels

I am presently runnning HP design 18 x 8 with a 38mm offset. The tires are 235 40 x 18 all around (these will be up for sale @ $400.00). The car has been lowered with Wietec Coilovers, its low but not to an extreme. I have absolutely no rubbing issues with this set up.
I see a lot of guys with B5s running BBS LMs which are 19 x 8.5 with an offset of 32mm. In my oppinion thats gotta be rub'n.
I'm considering LUFF wheels M1 (which I think is a better BBS LM replica than the Rial Daytona).
These wheels are 19 x 8.5 but can be ordered in varying offsets. I'm thinking a 19 x 8.5 wheel with a 38 or 40mm might work on a lowered B5 with no rubbing issue.
Opinions please...
