Disabling keyless entry remote
I've successfully programmed my key fob remote to lock/unlock my doors.
Now, if one day I decide I don't want keyless entry anymore for some reason, is there a way to unprogram it (clear the memory) so the rmeote buttons won't be accepted? Do I need VAG-COM to do that?

Did you try to reset it instead of reprogramming it. Put it into the drivers side lock and push both
buttons or something of that sort. It may be easier than reprogram. It resets/syncs the key with the central locks unit.

Ross-Tech site actually only tells me how to *see* how many remotes
are programmed using VAG, not how to remove them. Or, am I missing something? I only have one remote, already programmed as Key 1. How can reprogram to remove key 2, I don't get it, sorry.

It tells you how to change key location in memory.
You can pick any location to program your key into.
You'll need 2 keys to do it. One in the ignition the other in the driver's side lock. I have 3 keys programmed into mine and I have done what you're trying to do many times while getting all my keys programmed.
Here's how set the location and read the page in the link for the whole thing.

Press the UNLOCK button on the new key within 5 seconds often enough to reach next memory position (so, if the value in field 2 was 0001, you should press the new key's unlock button twice, to put the new key in memory position 2)..
