An overly rich fuel condition could also be caused by a bad or failing EVAP purge valve. Being tied to the fuel tank for purging vapors, if the problem truly is related to when you fill up, I could see this being more likely.
Lastly, a faulty O2 sensor after the cat could cause a rich condition.
A VAG-COM would probably be your best tool in further diagnosing the last two possible causes.

In my case, the MAF was just working just enough to not be a problem except when a little throttle was needed. I got some pinging under heavy throttle ~4-5.5k, but I never spent time looking into it. It's been driven like this for over a year -- the new MAF makes it feel like a new car again.
