It will certainly read higher on the road than the weather bureau says, especially over black asphalt. It will also read higher when parked after a run, since engine heat affects it.

I had an adjustable thermostat as you mention in my Honda but never used it. My reasoning was passing through the same point and time at different speeds, I.e me parked on blacktop on the side of the road on a hot day vs. driving 80 mph down the same road, I'm going to get two different temperatures at the same point. Also, in the town I grew up in, the temp in town was always 2-3 degrees warmer than the 2 miles in the country outside of it I lived. So reported temperature always reflected the town and not the country. If you notice major discrepancies that conditions don't explain, I would bring back to the dealer. May have a faulty sensor.
