Default ECT issue?

I recently had my timing belt and associated items(From Blauparts) replaced(at 90,000 miles) and that all went fine. Before I took it in I noticed the temp gauge would rise up to the middle of the gauge, but would drop back down to cold and eventually return to middle. I was acting erratic. So, I researched it and replaced the ECT(easy job), now the gauge will only rise slightly over the 2nd dash and hold there while the engine oil temp will rise and hold around 190-200(I think) during my normal drive. I thought I would be smart and purchased a sensor from ebay(yeah,save bucks) and it was some unmarked green sensor that fit. When I turn the car off for for 5 min to run in some place and restart the car the gauge will be 2 dashes higher, but will return to the previous dash. Where should the normal temp be and did I just get a P.O.S sensor?

1st - dont buy temp sensor from ebay
2nd - If you can find some one w/vag com scan block 130 - Engine cooling.
If you dont skip to step 3.
3rd - Purchase OEM sensor.

It's normal to have the coolant temp rise after you shut down the engine when the system is warmed up. The coolant stops moving (mostly), but keeps absorbing heat from the motor/turbos, so it heats up a little after the engine shuts down.

Ok,problem solved. I ordered a new sender from Bernardi($20 and change) for a replacement. I checked the temp of the air vent with the heat on high and it was reading 160, so I figured the thermostat was working fine. Tonight I swapped the sensor and went for a ride and it warmed up to the middle of the gauge within 3-4 miles. I was initially thinking my thermostat was junk. Lesson learned: Don't buy sensors from ebay unless it it genuine audi.
