You don't mention what year e-tron you have but in short, the side stripe lights are part of the "Light Function Pack". This SHOULD be part of the FOD (Function on Demand) if you had not selected it at the build stage but early e-trons such as mine (2019) despite having the hardware, have not had the option in the shop to purchase.
Audi have already checked and confirmed the hardware is the same as one that does have it /can have it enabled - ie the bulbs are essentially in-place and hooked up.
The light function pack itself enables 3 things from memory - the stripe lights, the rear tailbar animation when you lock/unlock at night and I believe the dynamic cornering lights up front but not 100% on that last one.
I worked with Audi and Digital services for over a year (have a thread on here) and it went all the way to the top because of the amount of fuss I made including rejecting the car given I had it in writing the sale of the car would be on the caveat this pack could be enabled (at a cost) otherwise I'd have just gone for another model - the end result after all this time and numerous hours from the dealership service dept who were spending time looking at the software etc, it cannot be enabled.
Again this might be dependant on the age - If you have a newer model, it might be a simple case of requiring a software update to enable the FOD/Shop option.
Initially like some others here, I got nothing at all in the shop - I then had a software update (at the dealer) which enabled the option to purchase
*Matrix lights with dynamic indicators (sweeping indicators) which I did purchase
*Audi Connect Key - Also purchased this
*Audi Connect navigation and infotainment - and also purchased this too
All 3 I renew annually though I should have just purchased the matrix one altogether given how much I've already spent.
Some also have the self-parking pack available to buy/rent but due to age, as mine uses LIDAR for the adaptive cruise, the steering control/wheel does not allow self-parking to work with it along with heated steering.
So short version is:
Does your in-app Function Store display anything?
>If not, you may require an initial software update
>If it does, it might be that the age of the car does not allow the Light Function Pack

It is quite frustrating at times when I see another e-tron with the full headlights illuminated - especially as mine is heavily specced - I should have just given the car back at the time but it was the year EV prices were soaring and I thought I'm never going to get a high spec/nearly new e-tron like this for the price I paid...of course a year later, who knew it would dump its value to less than half of what I paid! Sods Law
If all you are seeing is the Matrix option in the shop, I suspect your car will not support the lights either
I would speak to Audi Digital Services to see if anything is not setup properly on your profile/VIN number
Note, it is very frustrating to deal with them - 99% of them are people who are essentially reading from a script and usually give you the switch it off and on rubbish.
My dealer escalated this quite high and after several weeks, it was deemed not possible
This must have come out of one of those "how to throw away market share more effectively" sessions.
The ONLY good thing about the likes of say Matrix is the cost-saving. Building it as part of the car when you're only keeping it for 1/2/3 years means actually speccing the Matrix at build is probably quite a bit more than spending the subscription fees for only the time you own the car.
This works on lease/PCP type purchases where you return the car after your term.
Of course in other cases like myself where I've purchased it outright means the only way I can get it is by paying that subscription or a much higher than build cost to make it permanently active...the flipside being HOPEFULLY you re-coup some of that permanent money paid in selling a car with the function enabled.
Also in some cases, again build cost vs subscription cost might work out if you don't use the function - in BMWs case, I believe heated seats come with the IX but if you don't spec them at build, you get them disabled. If cheap enough, one may only use heated seats during winter months thus saving the full-on cost in having a function you would never use outside of winter.

It's one thing to buy a software subscription where there's maintenance involved, continuous improvement, zero capital cost etc. There's no parallel between that and permanently paying to keep a switch (that you already own) turned on. Whoever thought this was a good idea should be run out of town. It's 100% wishful thinking in terms of business strategy and the easiest way to destroy whatever goodwill they have left.
