As with any Audi, your Drive Select setting is retained and your transmission setting is not. When you choose Dynamic from the Drive Select menu, that's your setting until you change it. When you choose S mode for the transmission, it's retained for that driving session only. The next time you start the car and select a gear, the transmission will default back to D; it will not be in S mode any longer. This is the same as other cars with automatic transmission.
The confusion arises when choosing Dynamic from the Drive Select menu when you're already underway. When you do this, the car also places the transmission in S mode for that driving session. If you power off, the Drive Select setting is retained but the transmission mode is not.
A fair amount of my driving is on winding roads going up and down canyons. For these trips, I change Drive Select to Dynamic so I can benefit from the better handling. However, I don't need more power or pedal response for these drives, so I manually change the transmission mode from S to D.
