Paint sealant?
Dealer was going to sell me "Protector" paint sealant. Sounds like a great product if it works as advertised... but does it? How about similar products like http://www.5starshine.com/ and the like?
Basically, I'm looking to keep my Black '04 A8L looking like new with as little maintenance as possible. If the first treatment is expensive, fine, just as long as it works as advertised.

You're just lining the dealer's pockets.
For the least amount of work...consider synthetic waxes like Klasse, Wolfgang, Blackfire, or Zaino. Any of them should last 3 months with the first 1-2 coats. I'll let you search for more info.

The paint sealer sold by dealers is an expensive scam, so skip it. You can do the same yourself with one of the acrylic/polymer sealant/protectants mentioned in Raj's post.
"Keep black looking like new" and "as little maintenance as possible" are generally mutually exclusive concepts, unless you want to just pay someone to do it. Based on my own experience with a brilliant black audi over several years, I'd say you can go 12 - 18 months without putting much work into it, but by then you'll notice the paint starting to look pretty shabby. Better to just develop a routine at the outset and stick with it.

Thanks... I did pass....
...just wanted to make sure that they haven't suddenly gotten good. What's the recommended first treatment for a car that's been sitting in the dealer lot for a few months and already has a few hair-fine scratches on it?
