I think they do this to combine the aggressively high bite of ceramic with the more gentle engagement of kevlar to give them a moderate engagement bite at reasonable pedal pressure. When fully engaged the high Cf of ceramic will hold the torque but with less pressure than Kevlar alone would require. This would also put more heat into the flywheel than the pressure plate.
I used the AWE stage 3 clutch on my 400+ HP S4 with best results. It's also very tractable in traffic.
