Am I missing something? How can Ford's V8 have better MPG than Audi's V6?

Don't confuse highway MPG with stop and go MPG. The 26 highway rating is a result of higher gearing in the Mustang, possible because of lower curb weight and rolling resistance. The Q7 has more than 6000 lbs to push compared to a Stang with about 3600 lbs. The Q7 has the AWD frictional losses and has much more frontal area causing more wind resistance.
If you compare the city MPG ratings, they are much closer or even better with the V6 Q7.
I get about the same city MPG between my 3.6 Q7 and 6.0 liter Corvette. But on the highway, the Corvette barely turns 1500 rpms to do 70 mph. I get about 25 highway on that 400 hp 3300 lb car.
