disappearing oil?
the ESP or the diesel? neither are VW approved and it looks like the ESP is for diesels also?
the only one is 0W40 VW 502.00/505.00/503.01

the dealers around here use Castrol 5W40 Syntec
it seems to be readily available and priced decently
I do 5k changes, and mostly highway miles...

The Castrol oil used in UK and Australia is VW Longlife III vw 504-507. ( Also known as SLX Powerflow Longlife III in Australia and Castrol Edge 5w-30 in the UK).
Over the last few years Audi/VW has tried to rationalize their very complex oil specification guidelines such that (with a couple of exceptions) all Aud/VWi cars from the smallest Diesel to the largest most powerful petrol engines use the same oil.
I am unsure of the reason why in the US different VW oil specs and viscosities are used. More imporatantly I am unsure if these oils represent a better choice.
emission/fuel economy related, lighter oil, less drag/pumping losses, etc.
or climatic, we have some warm parts of the country
what is spec'ed for say the middle east or Africa?
Well Australia is a very warm country....not actually sure about oil specs for the middle east or Africa. I bet you it is 5W-30.

and someone had a line in a reply about heavy driving and lots of stop-and-go traffic. that pretty much defines my daily commute: 100 miles round trip of about 1/3 stop-and-go and about 2/3 80mph cruising (with some spirited passing sprinkled into the highway driving).

oh yeah: the 'diesel' oil was only the 1 quart that i used to top it off. i'm not sure what exact kind the dealership used.

I agree, from the other perspective
, I'm not sure that 5W30 is a better choice, it would seem a compromise that sacrifices engine wear/longenvity for a few 1/10th's mpg...there could be no other reason because you can get 5w30 here just as easy, so it's not:
-availability
-climate
-and may be MPG
the 5w40 would be less volatile (higher flash point) and lead to less deposits, and has better high temp performance (viscosity and shear)...
most high speed V8's run a thicker oil, some as high as 10W60
