"Dynamic" Quattro
To actually answer the original question, the drive-mode Quattro doesn't change much. Dynamic will be slightly more likely to preemptively engage the rears under heavy throttle, but in my experience logging the amount the haldex is engaged with VCDS while driving in different drive modes, it really doesn't change a whole lot.

Clutch vs Clutch Pack vs Multi-Plate Clutch in no way changes how Haldex quattro works. Literally every "clutch" on the car including DSG is a multi-plate clutch. It either couples the rear axle to the front or it doesn't, with a single hydraulic control channel. If you want a system that can do a rear-bias AWD, then you need to upgrade to an A4 or S5 or any of their bigger models with crown-gear quattro.
