I have been looking too. Here is a link to the maintenance schedule for 2015, probably similar to 2016 but the key is still the dealer pricing attached to the service. I am inclined to agree with you and not pay the $1K+ but I'm still analyzing it all. We keep our cars for at least 8 years and we have never done a pre-paid schedule. However, the S7 is a car I want to keep in tip top shape so I am still thinking it over. If we do it we will get the AudiCare Plus (or Select or whatever the up t0 75K miles is called). Good luck making your decision.

I prefer to purchase CPO cars with ~20,000 miles in order to get ~80,000 miles of warranty. New cars get 50,000 miles which lasts me only two years. In purchasing my 2014 S7 recently I chose to go even further and get the Platinum level warranty (CPO is Gold level) to 125,000 miles or 8 years.
This is driven by a $6,100 repair to my S6 soon after the CPO warranty expired. That repair was followed by several more in the $1,500 range. Much as I loved the S6, repairs are expensive.
I expect to get my money back on the warranty several times over.
