I've tried the "normal" way and just can't make it work for me. For giggles, I tried with the heel on the brake and it's not to bad. Need practice but I think it's gonna work. Might still get some Sparcos but we'll see.

I don't see how this would work...
in order to be able to effectively modulate pedal pressure, you need your heel on the floorboard. I don't see how you can have your heel on the floorboard, and on the brake pedal at the same time...which tells me that you're lifting your leg to get your heel up on the brake pedal. Effectively, you would then be using your thigh muscles to modulate braking, which means poor modulation of your brakes.
Am I misreading what you're trying to say?

No. Heel stays planted on the floor board, and works the gas pedal...toe works the
brake.
Or...
Heel stays on the floor, and toe works the brake, while the side of the foot works the gas pedal.
How you choose to do it depends on your inclinations.
