I bought a spare ECU. Here's why...
I think it is the only way to be 100% certain the dealer won't know you are chipped. I swap my stock chip back in before service and he has no idea.
Even a feature like EMCS from APR can be risky because the dealer will see you are chipped if he opens your ECU, or you run the risk of losing your chip if he replaces your ECU or something.
Now I know this is very rare, but it has happened before. I just think getting a spare ECU is your safest bet. And you can return the car to stock form before selling it.
