Can you do coil overs on just the rear?
I would just like to have some adjustablity in the rear. Is this kind of set-up recommended?
Also, how difficult/easy is it to adjust them once they're installed?
Would appreciate your responses.

In theory, yeah. But what would you have on the front?
It would be extremely pointless to not have a matched suspension set up, and odds are, your car will handle like ****.
If you are doing this for looks, reconsider. Do it right or don't do it at all.
Adjustability depends on what brand of coilovers, some can have the height adjusted while still on the car, others require the removal of the spring/shock. All dampening adjustables need to be removed AFAIK.

You'd be dealing with different spring rates, rebound rates, etc.
I'd think that it could unsettle the car quite a bit.
I'm no expert, though.
I'd spend the extra $200 or $300 and get them all the way around. That way you can set the fronts once, then mess around with the rears knowing you still have a kit that was engineered to work a together.

I see. After doing more searching I see this is a bad idea. Very Bad.
Seems the adjustablity is to find the right height and leave it there - not to keep moving it up and down.

Yes, exactly. If you need to adjust it later you can, but it's not meant to be adjusted daily.
Plus the mismatched springs/shocks would prove to be a disaster to the handling dynamics of your car.
