Coolant question, need help

Coolant question, need help
i just had my timing belt, water pump, thermostat and a couple of belts changed but the place i brought it to seem to of changed my coolant. the coolant isn't the pink stuff that it use to be, its actually blue. i remember people saying that it should be the pink stuff from the dealer but when i called the mechanic, he's from Adria Motors in long island city, he said that the stuff he uses is better than the G12 coolant stuff that audi, bmw and mercedes uses. and he says that it is fully g12 compliant, but i just want to make sure because i dont want to have any engine life problems because of the coolant. also the blue coolant he put in is under the min line. what should i do? should i just use his coolant? he told me that i can put Texaco coolant if the coolant level is too low. My temp seems to be fine but my engine oil seems to of rised a bit, its about 225 degrees, it use to be 200. another question is if i were to have to change the coolant back to g12, is it a DIY job? the dealer told me it would cost about 200 dollars to do a full flush of the coolant and add in new stuff, should i bring it back to Adria motors? my car is a 99.5 A4 1.8tq.
