If my car was triggering the knock sensor would the check engine light go on?

may depend on how severe....
if it's a small problem (i.e. bad gas) it may flash the light but not trigger it to be on permanently. if the sensor is repeatedly tripped it may cause it to go on permanently, requiring VAGcom/VAGtool to remove the error code.
If the check engine light does only show up briefly you'll still have an error code in the ECU.
