When does a 0W30 oil go through 'the change'? (no, not menopause)
Just wondering at what temperature the molecules unfold and all that jazz to make the oil function as a 30 weight? Since Mobil1 doesnt sell their 5W40 over here, I'm wondering if there would be any benefit in using the 0W30 in stead of 5W30 given that I wont see any cold morning temperatures here in Houston. Depending on where the oil 'changes', it might make sense to go with the factory recommendation and use the 0W30.

Well, not as much as straight grade. If one were to graph viscosity as a function of temperature and compare SAE 30, 10 and 10W30, one would see the picture.
There are fixed temps (don't remember) where the viscosities of 10 and 10W30 cross on the low side and where 30 and 10W30 cross on the high side.
In answer, there is no temperature where the viscosity changes. Its doing it all the time and at a slower rate in multi-viscosity oils. They should call it "temperature insensitive oil" but then again, people wouldn't know what to use.
