Some engines actually get quieter from more timing.
More timing typically = more power with less 'calculated engine load', so you tend to get less of the "BAWWWW" heavy load sound at low to mid RPM.
Of course, those who are chipped B7's are running more boost (and more cylinder pressure, which = greater volumetric efficiency/load) due to added boost and timing, so it's probably going to be louder.
Mine is a little louder with the APR flash, but the engine sounds healthier. it "sings" now.
Audi should be shot for depriving the engine from timing so badly in stock form.
