B7 any good for sand dunes driving?

So, it has more ground clearance
than a B7 A4. As long as are careful not to high-center the car, Quattro and decent tires will do just fine.
Personally, I would not try this with a lowered car. If the sand is soft or deep, you're going to be in trouble unless you have some serious tires as well.

With the right tires aired down sure, but the lack of any real wheel travel makes it kinda pointless
Unless you want to do it at grandma pace. Speed keeps vehicles afloat in sand, so you could expect to bottom out the suspension quite a bit at any significant speed.

Depends on the dunes
No idea what your dunes look like. However, I'd ask around to see who drives them already and what they take. If folks are driving their normal cars there, you won't have issues. If "the regulars" are taking their ultra-light sand rails with big paddle tires or lifted 4x4 trucks with 34" swampers, you'd might want to reconsider.
You have to be very careful not to spin your tires while not moving...you will basically dig your car in and you will be stuck in seconds. Sand driving depends on flotation...you want to stay "on top" of the sand.
