Interesting observation regarding fuel economy since getting chipped.
My car has 4500 miles on it now. Only about 400 of those have been w/ the chip. Prior to getting chipped, the highest number I saw on the projected mileage until next refuel was 400 miles. Yesterday I filled up and it read 460, which is a considerable increase when you consider it. Since nothing else on the car has changed, I attribute this to the chip. It's APR 91 octane, btw.

In my observations, fuel economy definitely has not suffered since the upgrade.
Not sure if it's safe to say that it is better by any appreciable amount, but I know that before the flash, I recall seeing "430 mi" in the projected miles to empty. We still see that every now and then.

Is there a scientific reason for the MPG increase
this is just speculation on my behalf, but does a quicker spool of the turbo (and therefore more compressed air/oxygen into the mix for even more efficient combustion) equate to the improved MPG?

"Projected mileage until next refuel " is based on an average over the passed few miles driven.
So if you just came off a long highway cruise prior to stopping to fill-up then "miles to empty" will be rather inflated. A record of calculated average mpg per tank pre-chip and post-chip would offer a more accurate conclusion.

I understand what you are saying, but I haven't taken any road trips lately and
my driving habits are largely unchanged since getting the chip, so although it's certainly no scientific evidence, it's still indicative of an increase in economy.

Understood, but it would have nothing to do with road trips.
If you cruised lightly at 50mph for maybe 2-5 miles prior to pulling into a station it could have an artificially high "mile-to-empty" reading after you tank up. It is too dependant on driving style just prior to fill-up more than an actual average.
Basically it is telling you that if you continue to drive the way you just were for the past few miles prior to fill-up you will get this many miles from your current fuel load.
What is your average mpg per tank?

Here's my guess
I think it's the fact that you use the throttle less to get the same amount of acceleration out of a stop. This way, if you can resist the urge to floor it, then you're actually using less fuel (lighter throttle). I only noticed this after driving 5000 miles on the APR 91 and switched back to stock to take it back to the dealer. I had to step on the throttle a lot harder to get the same acceleration, and thus I think that hurt the gas mileage a lot.
