Question
Driving in 5th on the highway the other day at about 70 mph, I noticed the turbo had stopped working (no spooling/no sound/no pick up) for about 5-7 seconds, then kicked back in?!?! Ever happen to anyone before?

Turbo is always spinning...
It's activity is load based, and the harder it's working, the more noises you'll hear as it crams air into your engine. That said, cruising at steady state speed on a relatively flat grade (or downhill) presents very little load and therefore I would expect the turbo to be spinning along doing almost nothing (silent) until such time as the engine is under load.

Consider also, that the specific torque is lower at higher rpm compared to the same road load/speed at lower rpm in 6th, where the turbo is likely to be boosting higher because of the higher BMEP* or specific engine load is higher in 6th gear.
