This is exactly what I'm doing right now!
I've gutted headlights from ebay with 3" bi-xenons. Opened-up the shells with the help of a heat-gun, and transferred the chrome shroud with the projectors still attached. I also transferred the motor and its mount, and the rear cover. The internal wiring harness was exchanged also (minimal cutting of wires).
After examing the mounting points on various projectors/shroud I agree that the 3" projectors require a specific shroud with different layout of posts. The 2.75" projector's shroud appears to have the same posts configuration as the 2.25 projector (A6 2.8). The only caveat is the shape of the high beam area is more square than the '99.

The left and right projectors are the same...(more)
The cutoff shield in the left and right projectors are the same as far as I know on any projector out there today, so each projector should produce the same beam pattern.
E-code/ECE projectors (both halogen and xenon) have a distinctively sharper cutoff and a higher right-flare than do DOT projectors (The exception is S2000 projectors, they are perhaps the sharpest cutoff out there, even more so than ECE ones). Some projectors have a switchable shield to reverse the flare for right-hand drive cars or portions of europe where you drive on the other side of the road. Obviously you don't want the flare to kickup into the oncoming traffic. The flare is meant to light up pedestrians and the side of the road without having to aim the beam so high where it'd affect oncoming traffic.
If it were me personally, and I were goin to open up the housing and all to replace the projectors, I would repalce them with bi-xenons, S2000 projectors, or Hella 90mm "H9" halogens.
