How low do you let your brake pads go before you replace them???

Did you ask 30% of what?
If the pads were, say, 8mm thick new, then you've still got 2.4mm left. Plenty in my opinion, especially on the rear.
I know if you are handy enough to wire up paddle shifters, you can pull brake pads and have a look.
Usually around 2mm, I'll at least pull the caliper off and inspect the pads top & bottom to be sure the thickness is uniform. Too many times I've seen plenty of pad through the inspection window and zero or less on the bottom.
