Default Caster and total camber can't be adjusted with either. ...

All you can do is shift the subframe (both front and back) to set the same camber left and right.

S8 toe specs are 0.3 deg toe-in front and 0.2 deg toe-in rear. The last time I had my car aligned, I had front toe set to zero, and some who track their Audi's prefer a little toe-out. Toe-in improves high speed straight line stability, zero toe improves braking and tire wear, toe-out improves turn-in.
