Re: clicking noise from dashboard
Might just be the HVAC flappers flexing on start up.
Try turning the climate control off by pressing the fan button to full slow, then pressing it one more time. The control face should go dark.
Then start the car and listen for clicking. If NO, then at least you have a clue that the sounds are related to the HVAC.
You "could" make use of VAG-COM to display the HVAC valve motor status, but that would require a lot of reading in the service manual to know what is expectd and what is not normal.

my hvac flaps vibrate sometimes. sounds like a cross between a mini woodpecker and a piece of loose
siding vibrating in a strong wind.

typical A8 HVAC vent flap actuator motors clicking. If access to...
a Vag-Com you can run a test on them and it will reset them all - (2 under the hood and 8 inside the car) so they relearn there stop limits.
Sometimes it works for awhile, sometimes it does not.
If one is actually bad the Vag-Com will tell you that one is not responding and possibly give you an error code.

Speedo whine...
On longer trips I get a medium pitched whine that I suspect is a spedo cable noise. It seems to come from directly behind the cluster. My usual trips are less than an hour so I forget about fixing it until I hear it again...
