I was just getting ready to make my own thread when I saw this one. I have basically the same question.

I have a 2002 A8L and I started noticing last week that the temp guage was sometimes lower than normal. I went out of town this past weekend for New Year's and at one point I looked at it and it was all the way down to the C. A few minutes later, it creeped back up to the normal "mark". Later, it fell back to C again.

I had the heat on, and it was working fine, so I assume it is the sensor. I recently had the timing belt/t-stat, etc replaced, so I doubt that the t-stat has failed, especially since I had heat. I'm assuming it's just the sensor dying. Anyone disagree?

Is it an easy part to replace?

Yeah, my sensor did that. Easy to change. Search, if you like, for notes about changing it.
