looks like the phaeton/tourag folks have retrofitted paddle shifts in their cars. Could I guess this should then be easily doable for our A8s?

No - each wiring harness is individual - not possible

I've seen people do it on the A4's and and A6's, so I'm pretty sure it can be done for the A8.

But who is really going to take the time and money to create a custom wiring harness, rip out the dash and part of the interior, and the put it all back together again?
