First, this is not the S5 forum, but while you are here, have you checked oil level in the MMI? Is your warning for low oil level or for lack of oil pressure? If for low pressure, do not drive the car.

V8s used an oil level and temp sensor on the bottom of the oil pan.
Live replaced a few, oil has to be drained, sensor r&r. Use Hella brand sensor only.

It could be the hood sensor. The reset condition for an oil low warning is to sense the hood is open for at least 30 seconds then about 50miles later the system checks the oil level and if within range they clear the warning. An overly complicated scenario but I guess they figured hood open to add oil.
i suspect that your hood sensor is bad. Since the computer doesn’t think you opened the hood then it never checks the oil level and never clears the warning.
open the hood, get inside start the car. You should get a warning that the hood is open just like for door or trunk open. If you do then I’m wrong, if you don’t then get the hood microswitch replaced. You don’t need the $180 latch assembly just the $15 microswitch.
good luck.
