The description for the Warm Weather Pkg is:

Ventilated front seats
Milano leather
Front sport seats
Leather package

So it does say its a "sports seat" and I asked the sales team at my dealership, they said in terms of the build of the seat its the same as the sports seat. The different is it uses Milano leather so it can have the perforated seats for the ventilation, loses the massage function and only comes in black.

Default The Warm weather package

includes the sport seats, same as an S-line A5, not the super sport seats that come standard on an S5

The seating terminology gets a bit confusing because AoA often don't offer the full range of seating.

In the production range, there is a standard seat, a sport seat, an S sport seat and a ventilated seat. There are a multitude of different materials available: cloth, fake leather, Milano leather, Napa leather. But the combinations are quite restrictive, depending on A5 vs S5, and which trim level is chosen, etc.

As the other guys said, the ventilated seat is a sport seat fitted with fans and perforated Milano level. Black only as standard, but Audi Exclusive is available on the sport and ventilated seats. Not sure it is yet on the S sport seats. The ventilated seats will have to use Milano leather. In Germany, the S5 Audi Exclusive options are not as expensive as in previous models, and can include things such as Alcantara steering wheels and shift lever pad, similar to what was in the B9 RS5 shown at Geneva a couple of weeks back.

How well set up AoA, let alone a local dealer, is with Audi Exclusive and whether they will/can accept the order is another thing, of course. Any Audi Exclusive order has to be approved by AE HQ in Neckarsulm, but they will build almost anything.

OP: one question. I noticed the MMI control **** is in front of the shifter. Just from the pictures it seems like the shifter would get in the way all the time. Does this bother you at all from day to day?

Not at all. The shifter is low, and wide. It is designed to form a rest for your hand as you are operating the controls with your fingers - more stable when driving.

I noticed in a youtube video that the model they show on the mmi screen is of an A5 coupe and not an A5 Sportback. Have you seen this in your car? It is but a small detail though

It is at 8:30

I had to go and check! My MMI image is an S5 Sportback, even has Cavo wheels and silver mirrors.
