What would be the optimal Allroad wheel to mount large summer tires?

Why ET20?
If stock is 225, and I want to put a 255 on that is 30 mm wider. With ET20 wheel that would be 15 mm on each side, with ET30 wheel that would be 5mm on the outside and 25mm on the inside. IMHO that would look appropriate on the Allroad...

Not enough clearance to the suspension. I'm certain that a 255 tire on 8.5" ET 30 rim would rub...
in fact it would likely be worse than just rubbing - you probably couldn't even bolt the wheel on. You are proposing to add an inch of wheel width AND move it 5mm closer to the suspension.
In your example the 255mm tire on the ET20 is 15mm additional on each side. *ding* You retain tire centerline so suspension geometry is the same. The is more desireable than trying to 'hide' 25mm of tire under the car.
You mention the "looks". The allroad is unique in that fender rub is proably not an issue. Most people think that the allroad looks better with the tires pushed <b>out</b> a little. In fact, there is at least one guy here that is running spacers on his stock wheels for looks alone.
The tried and true setup is 245/45-18 on ET20. Remember, the stock wheels are ET25!! Personally I am going to run 18x8.5 BBS RK-II wheels in ET32 with a 15mm spacer. I am taking my offset down to 17mm rather than 20mm just for looks.
Of course we all have our own opinion about looks, but you are not going to be able to tuck that much tire on the inside with a higher offset.

Probably 245 but I will check the exact manufacturers specs on the tire I choose
I want to get closest to the OEM overall diameter as possible. All 245 tires are not the same diameter.

With 255's, an ET25 is the absolute least offset possible with 8.5 inch rim.
This is the set-up that I have, essentially. I have 18 x 8.5's, with 255/45 tires. The wheel is ET30, and I have 5mm spacers. There is no way to mount the wheel on the hub without the spacers (I tried). With the spacers, there is about 4-5mm of clearance between the tire and control arm.
