Oil refill
Anyone get a low oil level warning during the break in period?
What type of oil do you need to refill with? All I could find in the manual was Castrol VW 502.00 or VW 504.00 but nothing regarding the viscosity. 5W-40 maybe?

Audi 502 oil, 5W-40, in the US, just like the RS4 and most other Audi's
Factory oil is probably not Castrol, but is more likely Fuchs Titan GT1 5W30. However, if you want the best oil for your engine, I'd highly recommend the Renewable Lubricants Super High Performance 5W-40 HD oil that was specifically custom formulated for this engine.

...you're RI RS4 on that website 
I wouldn't buy anything from a site that looks that bad.
I assume the factory oil is Castrol considering that the cap on the oil tank is branded Castrol.

Your assumption would be most likely incorrect
Just because Audi has a marketing agreement with Castrol to place their name on the cap does not mean that the factory fill is Castrol. My sources in the UK believe that the factory oil is Fuchs Titan GT1 5W30. This is consistent with oil analysis on the factory oil that shows it to be unlike any Castrol oil currently marketed in Europe or the US.
You can certainly choose to purchase oil from anywhere that you like, but you'd be mistaken by equating a poor website to a poor oil formulation. RLI Biosyn is one of the most advanced oils in the world, and has shown to reduce Wear in the FSI V8 by a factor of 3:1 over every 502 oil tested. The patented Bio HOBS esters used in the formulation, along with the patented copper/antimony additive packages have phenomenal performance. This is based on my current database of 78 oil analysis samples across 18 RS4 engines, covering from 600 to 40K miles. It has also been borne out by independent test labs and racing applications.
And yes, I was RI RS4. After 40K miles in one and a half years on my RS4, I had to get rid of it to cut back on business expenses for this year.

I paid for the R&D to have the oil formulated.
I spent quite a bit on an independent tribologist, Terry Dyson, to analyze the oil, understand the engine, and formulate the best oil possible for street and racing. We then worked with Renewable Lubes to develop the oil.
