Going to IHG/PS21/One grand my car. When in the process do I apply touch up paint?

After the one grand
You really should wait a few days before polish/waxing over the touchup paint for durribility reasons. So I would do everything you plan to do, clean off the areas you want to touchup with rubbing alcohal and spot seal those areas afew days later.
