Default so my license expires on the 28th and i move on the 1st...

i'd rather not renew it using an address i'll be leaving in 3 days, but i'm not going to have any mail or anything like that for the new place yet. can i bring in a USPS change of address form or something like that? will the DMV accept that? or would i be penalized if i just renewed my license a few days late?

The DMV usually tries not to upset the elderly like that. Maybe that's why.
