I unplugged my MAF and still got the negative deviation fault code...
... I was thinking that this might have solved the problem but it didn't. I'm gona swap out MAFs tonight but I'm wondering now it the MAF is not the problem.

The MAF probably isn't causing the deviation code
but that doesn't mean it isn't part of the problem either. I still think you just have a boost leak somewhere....whatever came of the pressure test on the intake system?
Lets look at the basics here, your N75 valve is at 95% and the turbo isn't making requested boost. That means your turbo is *trying* to make boost, but it's just being blown out somewhere.
Look at block 031 and see what the two fuel trims are. Should be under 5%. Let us know what they are.

the pressure test...
... was the bubbling sound in the oil, thats all I could hear. No hissing from any other part of the intake system. Over time, the pressure was lost though the bubbling in the oil.
the fuel trim numbers from block 032 are 0.8% and -3.9% for idle and part throttle respectively. With the MAF unplugged these numbers went to -3.9% and 0.0% respectively.
Should I try another bpv?... thats the only thing my pressure test wouldn't have tested.

Sounds Good
We know it isn't the N75 because it seems to work just fine when it cuts your boost off in limp mode.
Try re-orienting the BPV if you haven't tried that first. If it's still jacked then just replace the BPV, 710N is like 30 bucks and will do the job well.
Something new to think about, maybe your cat is clogged up more than it should be. At higher RPM's and exhuast flow the blockage could be preventing the turbo from making the requested boost. If you're out there in 4th and you floor it at 2000RPM's, at what RPM do you hit 1bar of boost?
I haven't had a k03/k04 in a while so I don't know what the reading *should* be, but it might be something else to kick around while you're swappin' out the BPV.
