Those using an FM oil cooler....
What adapter are you guys using in place of the old watercooled oil cooler.
The only one I have found so far is one from Mocal...<ul><li><a href="http://www.thinkauto.com/takeoff.htm">Type A</a></li></ul>

no need to touch the OE oil cooler, just get the oil filter relocation kit, you can tap your FMOC
after the filter<ul><li><a href="http://www.jegs.com/cgi-bin/ncommerce3/ProductDisplay?prrfnbr=1786&prmenbr=361">http://www.jegs.com/cgi-bin/ncommerce3/ProductDisplay?prrfnbr=1786&prmenbr=361</a</li></ul>

Oil filter relocation kit will allow you to tap into for a FMOC, but.....
why would you need/want to on a 12v V6? The filter's right there at the bottom....
How thick is the OEM 12v cooler/heat exchanger? If I remember correctly, they're the same as what's on the 1.8T's. You may be able to upgrade it to a 5v V6 one, which would be about 150% thicker. It'd still fit in the same place, not require any serious install time, low cost, and not take up any additional room.

Its thick enough..
I just dont like my coolant cooling my oil.
I really want to SEE a difference in my oil temp. A relocation kit isnt a bad idea but theres plenty of room down there and the filter is right where I like it, easily accesable on the bottom. So if I were to just buy the sleeve adapter, I can just plug in an oil cooler/lines.

What I'm using...

You are right. A thermostat should be used. Mine is external to the cooler.
But the canton sandwich adapter uses 1/2" NPT fittings. I would be shocked if you used anything bigger than that. 1/2" would be the size you want if you're going to use 10AN lines.
The pictures from your site look like you are using 8AN lines(smaller than the 10AN lines, but also good with 1/2" NPT threads.) Both 8AN and 10AN lines would be acceptable for use on our cars.
